Poll question: How do you cook your turkey?

I'm a brined turkey fan (salted water, brown sugar, pepper, cinnamon for 24 hours), unstuffed, basted with butter and soy sauce. I usually put aromatics in the cavity, onions, herbs, cinnamon, apples, and whatever else I can find in my fridge.

5. how to make the brine?
I have a 16-lb bird. I imagine enough water to cover the bird. But how much salt?

7. Opinions vary
but from what I've read, the norm is 1 cup of kosher salt per gallon. Seems like a lot, but most of the salt stays in the water. Kosher salt is the key, never use table salt.

8. Brine Recipe
I don't have it with me but you could google it. Mine calls for 2 cups kosher salt, 1 cup sugar, 2 T crushed tyme, garlic, juniper berries and I can't remember how much on those last two. I didn't bother with the juniper berries.

Brining the turkey makes it so juicy and tender you won't believe it.

11. I will be roasting one and smoking two
For brine I use 1 cup salt, one cup sugar, and 1 Tbs. each of Onion powder, Garlic powder, Rosemary, Sage and Thyme per gallon of water. I will be smoking with a mixture of Apricot and Apple wood.:loveya:

I guess this might work, if the turkey were reasonably small, it was a good fireplace (and you had proper fuel and a nice bed of embers) -- and of course, the aluminum foil.
