I love the ^%#@ out of Thanksgiving leftovers!!!
Goddamn, a turkey sandwich, some stuffing, cranberry sauce, mashed potatoes, and a slice each of the two pies I made for yesterday (they turned out great!!!!) sounds like a really great lunch.

I had a great day with my AZ family yesterday - ALL DUers!!! No discussion about politics could go wrong (being that none of us would dream of voting for Dean, for example :evilgrin: ) We watched movies instead of moronic football games, and appreciated a pale crescent moon rise after a beautiful sunset over the red rocks of central Arizona.

Anyone else love the ^#^#%@ out of Thanksgiving leftovers? :D

I thought ZenLefty Day was your favorite Alternative Holiday! Or did you concede that "ZombyWoof Eve" was a better name for it?

We don't have that new-fangled Daylight Savings in AZ, so I will never celebrate Gain An Hour Day ever again, and my 14 clocks and watches thank me. :D

14. I love the day after!
On Thanksgiving day everything is focused on having the one big meal but the day after is different.

For breakfast I had cold cheese grits with a brownie chaser.

For lunch I had lots of cornbread dressing, a devilled egg and a slice of pumpkin pie.

Snacks have been a piece of ham or turkey, a few olives and 2 leftover clover rolls.

Hmmm, what to have next!

I been snacking all day.. need to workout some when I get home..

All us pre 30s have had a blast, swimming and playing tons of ps2, unfortunately my freeper cousin beat the hell out of me in his wrestling game

24. Hey, try some of these recipes:
SWEET POTATO WONTONS

2 Tbsp. butter
1 red bell pepper, diced
1/4 cup chopped onion
2 tsp. curry powder
1 cup chopped cooked sweet potatoes
1 Tbsp. flour
1/4 cup sour cream
2 Tbsp. mango chutney
24 wonton squares
2 Tbsp. butter, melted

Melt 2 Tbsp. butter in a large heavy skillet, and cook red pepper, onion and curry powder until tender. Stir in cooked sweet potatoes. Cool. Stir flour, sour cream, and chutney into sweet potato mixture.

Preheat oven to 350 degrees. Brush wonton squares with 2 Tbsp. melted butter and press each into miniature muffin cups. Spoon sweet potato mixture into the wonton shells and bake at 350 degrees for 12-15 minutes until golden brown. Makes 24 filled wontons.


TURKEY FINGERS WITH CRANBERRY DIP

1 cup cranberry sauce
1/4 cup sour cream
2 tsp. prepared horseradish
1/2 cup sour cream
1 Tbsp. lemon juice
Cooked turkey, cut into 1" chunks
1 cup dry bread crumbs
1/2 cup ground nuts
2 Tbsp. melted butter

Preheat oven to 350 degrees. Combine cranberry sauce, 1/4 cup sour cream and horseradish in a small bowl. Blend well and set aside. Combine 1/2 cup sour cream and lemon juice in a shallow bowl. Then combine bread crumbs and ground nuts in another shallow bowl. Dip each turkey piece in the sour cream and lemon juice mixture, and roll in the bread crumb mixture. Place on greased jelly roll pan. Drizzle with melted butter.

Bake at 350 degrees 10 minutes, or until the turkey pieces are heated through and the bread crumb coating becomes crisp. Serve with the cranberry dip.

TURKEY MORNAY

1/4 cup butter
1 onion, finely chopped
3 Tbsp. flour
1 cup chicken broth
1/2 cup cream
2 egg yolks
1/2 cup Gruyere cheese, shredded
2 Tbsp. Parmesan cheese, shredded
2 cups cooked turkey or chicken, sliced
4 English muffins, split with fork

Heat butter in heavy saucepan. Add onion and cook and stir until tender. Sprinkle in flour and cook, stirring, until mixture bubbles. Cook for 1 minute. Add chicken broth and cream and stir well with wire whisk. Bring to boiling and cook 2 minutes. Remove from heat and stir a small amount of sauce into the egg yolks to heat and temper. Stir tempered egg yolk mixture into the rest of the sauce and return saucepan to heat. Cook for 2-3 minutes, whisking constantly. remove from heat and stir in cheeses. Stir until smooth.

Toast English muffins until lightly browned. Place sliced turkey on each muffin and pour sauce over each. Sprinkle with more cheese, if desired, and broil 2-3 minutes until lightly browned and bubbly. Watch this carefully while broiling! 4 servings.
