What can I make for dinner with these ingredients? |
|
I have a bunch of stuff that should somehow add up to a mexican meal but I can't figure out how to put them together.
Package of largish flour tortillas Can of refried beans with chilis Small can of chilis Small can of black olives Hunk of pepper jack cheese Lettuce Tomato Onion
Any suggestions would be appreciated.

I'm not really sure what's in that can of refried beans--I've never had them before. Can you just heat them and scoop them in?

Fry the flour tortillas and drain on a paper towel. They cook quickly. Then layer one tortilla, a smear of refried beans, grated cheese, and a pile of the other ingredients, cover with another fried tortilla and repeat the other ingredients.

Kind of a Mexican layer cake. Are you supposed to heat the beans? Can you just dump them in a pot to heat them?

I add a little oil to make sure they don't stick. You won't need to season them. You could add the chilis to the beans while they heat. Or not :-).

Heat the refried beans to warm -- they're easy to work with that way. Mince the onion. Chop the tomato,some chile and the black olives and mix together for a salsa (you can add salt and a touch of lime juice or white vinegar too.) Make the salsa first because it will have better flavor if it is allowed to meld for about 1/2 hour.
If the lettuce is iceberg or romaine, you can be adventurous and diced a leaf or two to add to the salsa just before serving.

Chop some of the lettuce, shred the cheese. Set aside.
Chop the tomato small, chop the onion small; dice up some of the chilis and mix it all together. If you have some lime, squeeze it into a small dish, mix it with some salt, then stir it into the onion/tomato and you have salsa.
Heat the beans a little bit, in the microwave is fine. Meanwhile, heat some vegetable oil in a large sauce pan, medium heat.
Lay the tortillas flat with the prepped ingredients linedup. First smear the beans onto one third of the tortilla in a strip. Heap em on. Place the cheese on top of the beans, then the lettuce on top of that, than top finally with a layer of salsa and olives on top.
Roll it up gently but firmly and lay in the pan seam side down, hold it while it sizzle with a spatula so it "cooks" closed. You can line them up in the pan and you'll end up turning them about 4 times to brown each side gently, not too dark. It's like a taquito but with a flour tortilla, so it's more tender.
If you've made enough salsa, you can also dip it in that as well.

maybe two layers of each ingredient like you would lasagna(shred the cheese first). Heat it in the oven until everything is nice and hot. Cut up the lettuce, tomato and onion to serve on top or along side as a salad.
I've never tried this with these ingredients, but I think it would work. If you had a can of enchilada sauce to use in the layers, it would probably add to it.

Put cheese, chilis, onion together between two tortillas. Fry up in a pan until the cheese melts. Cut into triangles. Serve with beans on side with a little cheese melted on top. Make the lettuce & tomato into a nice side salad if you have any dressing.
