I'm making my first cassoulet tonight - started it Thursday |

with the bean soaking, then I cooked the beans yesterday, but I wasn't feeling well so I stopped the cooking and rested the rest of the day. Now, tonight, I'm finishing it - I've cut up the duck, browned it, and now have it simmering in the bean juice. In about an hour that will be done, and I'll be able to put the whole kit and kaboodle together with the andouille and kielbasa and bake it into what I hope will become true cassoulet perfection.
I'm making this recipe, except I'm using one pound garbanzos and one pound navy because I like garbanzos.
