Hey Trof! Cajun Chicken and Rice?
In South Carolina we call it "Chicken Bog" Chicken and rice cooked together. Seasoning, celery, carrots, onion. Must cook it with skin make it yummy greasy!

that's a really good idea for campaign events.

I'm in SC and we've always called it just 'chicken and rice' 'round here. Stew the chicken, then remove, cool, and take out the bones. Add back the chicken, rice, salt and pepper, and nothing else. Serve it like a very thick soup - lots and lots of rice. It's poor folks food, dontcha know.

I like add those tiny fiery hot peppers (I call 'em firecracker peppers) to mine.

be called "Chicken Bog". Chicken bogged down in rice, kinda like clammer bogged down in mud.

Serve with soy sauce.

3. Add a bunch of
Emeril's essence seasoning (or a homemade copy of it, which is what I do). If our foreheads aren't sweating just a tad, it isn't spicy enough! (We also like adding sausage, like andouille.)
