The very overdue WTVC #8- Pasta Salad
Sorry this is so badly overdue, I had a bad case of procrastination going on. I blame the lack of protein. ;)

Anyhow, what you need is a reasonably powerful blender (good) or a food processor (much better) a pound or penne or a similar pasta, a jar of sundried tomatoes packed in olive oil and a 6 oz can of whole pitted black olives, drained. Boil the pasta to al dente and while it's on the stove blend or process the olive mixture. What you'll need to do is put about 3-4 tbsp tomatoes and a healthy splash of the oil your blender or food processor. Run them through until only a little chunky, then add the olives and process them until chunky but ideally not until you have olive paste.

Drain the pasta when it's ready, fold in the olives mixture, then cover and refrigerate.

Add salt if needed and serve cold.
