I just finished 6 batches of fudge...
making not eating. :-) Ask me anything. *hee*

I'm feeling so productive. And it really helped get me in the holiday spirit.

4. Quite a variety
Some matte and some glossy. Some was chocolate with pecans. Some was chocolate with no nuts. Some was white chocolate with pecans. And Some was peanut butter fudge. Yumm...

7. Did you cheat...
...and use marshmallow fluff or evaporated milk or something?? Or did you make *real* fudge that you need to beat 20 minutes before it sets up?

I'm kind of a fudge purist, myself. Mine only contains chocolate or cocoa, cream, sugar, a little corn syrup, butter, vanilla, nuts.

I have a recipe for "Oklahoma Brown Candy" from an old Farm Journal Candy Cookbook that's amazing stuff. And a real wierd process, too -- melting/burning sugar, drizzling it into boiling cream/sugar mixture. Fantastic goopy nutty stuff. I think I need to make some...

8. I can make fudge the old-fashioned way...
but when I'm making several batches, like tonight, I usually "cheat" to save time. My chocolate fudge recipe is the easiest in the whole wide world. Uses marshmallows instead of marshmallow fluff. And it always turns out good which I can't say for my "real" fudge.

With the white chocolate and peanut butter fudge you really don't havea choice but to use the marshmallow fluff method. :shrug:

9. Aye, there's the rub...
Sometimes you end up with ... frosting instead of fudge. And *one* batch makes my arm feel like it's gonna fall off.

I'll make a mental note to mail you the Oklahoma Brown Candy recipe when I find that cookbook... it's sort of a cross between fudge, caramel, Texas-style praline, and one of those pecan nut roll thingies. I always stupidly end up eating half the batch in one sitting & regretting it later...

10. Sounds yummy...
and definitely like something my momma would like. If it involves a candy thermometer in any way I have to have my mom present to make it. I have really really bad luck with recipes that involve candy thermometers.

My last batch of pralines didn't just stick to the wax paper...they stuck through the wax paper to the kitchen table. And I don't talk about what happened with the divinity.

I can bake - I rock at it - but my and cooking candy just don't get along.
