the lightsaber is powered by your connection with the force. being a jedi is a spiritual thing and thus when using your saber, you are pitting your spirit against another in a battle. a fight with pocket knives is more of a low class street fight, and thus not the same kind of event. you don't really want an epic spiritual battle involving pocket knives,if it comes down to stabbing someone in an alley, use a real knife.

If you're the sort to use/own a lightsaber, you're also already trained in the use of the Force.
If you're the sort who's trained in the use of the Force, you're probably not likely to use a pocketknife thing-y for opening your CDs, etc. After all, if you can lift an X-Wing out of a swamp with your mind, you can probably shred through that packaging pretty easily.
