Need help with a recipe - vegetable yields. |

Can anyone help me with this? I want to make giardiniera, and the recipe calls for four cups of cauliflower florets, four cups of sliced carrots, two cups red and green bell peppers cut into one-inch pieces, and two cups celery sliced 1/4" thick.
How many heads of cauliflower should I buy, how many pounds of carrots, celery , and peppers do I need to meet these requirements?
I would post this in the Cooking Group, but I want to go buy the produce tomorrow morning and I don't know how much traffic that group gets on a Saturday evening. Any help would be much appreciated.

for the four cups of florets. That may be slightly skinny, but two heads would be too many I think.
I'd say two pounds of carrots for the sliced carrots (you'll have a bit of extra I'd guess).
Do you need two cups each of red and green peppers? I think you'll need about a pepper per cup, maybe go with three each color to get two cups of each color.
One package of celery should easily get you the two cups of sliced celery. It'll be cheaper to buy the whole package rather than buy individual ribs. You may have some left over to stuff with peanut butter. :)

The recipe calls for two cups total of the peppers, so I guess I need one cup of red and one cup of green. I think I'll substitute yellow peppers for green ones - I like red and yellow peppers but I just can't stand green ones. Thanks for the help!
