Got a great meatloaf recipe? Hell, even a mediocre one will do... post it here!
I'm not a big fan of meatloaf but the SO has got it stuck in his head that he MUST have meatloaf soon or he'll keel over :eyes: Help me out and give me your best recipe for meatloaf :bounce:

here's my meatloaf for two:
1 1/2 pounds ground beef (sirloin is best tasting but pricey)
1/2 pound unseasoned pork
Ketchup
1 egg
bread crumbs (I don't measure this but a handful is good.)
jar of your favorite spaghetti sauce

Mix all ingredients except the sauce. Put in cake pan, shape into a loaf. Add cup of water.
Bake in a 350 degree oven 1 hour. I usually cut the loaf in half, lift out the halves onto
a plate or a pile of paper towels. Dispose of any leftover water. place the meatloaf back in pan
pour sauce over it. put back in oven for 1/2 an hour.

Pull the meatloaf out. Allow to sit for 5 minutes. slice and enjoy.

I usually make a 6 pound meatloaf (for one this small, you may not have to cut it in half.)
If you can't find unseasoned pork, just use more hamburger. It's really flexible.

4. OK..I'm back, thanks for waiting.
This recipe is from Alton Brown. It is very much like meat loaf that I used to get at a local microbrewery that went out of business. We love this recipe. Only two things that we change. I use regular croutons (and put in more garlic) instead of the garlic in Alton's recipe. We also double the amount of glaze. It also makes great meat balls. I expect a personal email of thanks after you have tried it.

16. This recipe is from Sandra Lee.
1. Scoop out the innards of two already-cooked meatloaves and combine into a new meat loaf.

2. Put some ketchup in a Ziploc, and add some vodka for no reason. Then mix.

3. Cut the tip off of the bag, and pipe the mix on the new meat loaf.

4. Bake in the oven, for as long as it takes Sandra to drink a keg.

5. About 10 minutes.

6. Carefully pull the meat loaf out, while having another cocktail.

5. Big bowl, hamburger, graound sausage, minced onions, finely crumbed
dried out bread (crackers add too much salt)..a few eggs..a smidgeon of milk..

smoosh it all together, grease a loaf pan and form a "crown" on the meatloaf..

Drain the excess grease off from time to time so it doesn;t sit in it ./.
YYum.,. we love meatloaf at our house.. especially cold from the fridge, sliced thin on bread with mustard

1 lb hamburger (lean)
1/2 pound pork sausage (I use spicy)
1 egg
1 cup milk
1 cup breadcrumbs
1 small diced onion
1 can Campbell's tomato soup

Mix it all together in a loaf pan, cook for about 1 1/2 hours. I cover with foil for about 15 minutes, then take the foil off. It's very moist, so needs to sit for a little while before you cut. The sausage makes it really good. Cooking time will vary dramatically depending on whether you use a pyrex or regular loaf pan.

two or three slices of white bread pulled into itty bitty pieces
half an onion

then flavorings-

bit of ketchup
splash of worseshistersishtershite
salt
pepper
paprika
squirt of sriracha

And then you should be good to go.

I think I'm forgetting something though.

and some linseed, use prime-cut, lean, grass-fed, free-range beef.
Chopped potato, paprika (in addition to the usual onion, green onion,
egg, milk, beef, pepper, cayanne pepper, fresh tomato, celery,

12. Mine doesn't use sausage or bread
Hamburger - couple pounds - get something lean, or have it ground
one or two onions, chopped
cracker crumbs - regular saltines at least one whole stack of singles, crushed (use a rolling pin)
one or two eggs, lightly beaten
a little Worcestershire if you have it (teaspoon?)
ketchup
bacon, couple of slices

mix first 5 ingredients well, add a little milk if it seems too dry
form into a loaf shape on a piece of foil wrapped cookie sheet (or not touching sides in a cake pan}
(can be baked in a bread loaf pan, but make sure you are using LEAN hamburger or it can be really greasy)
spread a thick layer of ketchup on top, lay bacon sliced on ketchup
bake at 350 45 min to an hour use a therm if you have it

Serve with canned spinach seasoned with a touch of bacon and mashed potatoes and butter (or brown gravy)

leftovers are good cold with more ketchup on white bread

optional with the onions, chopped bell pepper or jalapeno

It's a combo of one my gran used to make and one I make.

1 lb. ground beef
1 egg
1/2 can tomato paste
1/3 cup grated parmesan cheese
1 envelope French's meatloaf mix (not McCormicks, French's if you can)

Shape into round loaves and bake.

In a bowl mix Campbell's Golden Mushroom Soup, Worchestershire sauce (about 1/4 cup), garlic powder (approx. a coupla teaspoons), and cinnamon (yes, cinnamon-about a tablespoon.)Add in additional sliced mushrooms. When the meatloaf is about 3/4 of the way done, pour the soup mixture over them and continue baking for about 15 minutes.

Serve with garlic/sour cream/paremsan cheese mashed potatoes!

Golden Dobbin Meat Loaf

1 C chopped onions
1 tart apple, peeled and chopped
2 T butter
2 tsp curry powder
2 lbs lean ground beef
1/2 C fine dry bread crumbs
2 eggs
1.5 C milk
2 T apple cider vinegar
2 T sugar
2 tsp salt
1/4 tsp pepper
1/2 C sliced almonds
6 whole bay leaves

Saute onion and apple in butter until soft. Stir in curry and cook for 1 minute then pour into bowl.
In large bowl add to ground beef the bread crumbs, one of the eggs(lightly beaten), 1/2 cup milk, vinegar, sugar, salt, pepper, and almonds. Mix well. Add apple onion mixture to meat. Mix well again.
Pack meat mixture into a baking dish(8x12). Arrange bay leaves on top and bake in 350F oven for 50 minutes.

Lightly beat remaining egg and 1 cup milk together. Remove dish from oven and drain. Slowly pour egg and milk mixture over top of meat loaf. Return to oven for 10 minutes. 6 servings.

Two pounds of meat (total) is a good family meat loaf.
1 raw egg per pound of meat, one whole onion, minced, half a green pepper, also minced, Salt & Pepper, natch, Half a bottle of Heinz Chili Sauce, 1 tsp. Worcestshire sauce, a cup of fresh bread crumbs (whirl some good solid soft bread in a processor to make 'em). Form into a loaf shape on a baking pan with edges (not a cookie sheet) and wrap with strips of raw bacon.

Bake at 350 for 1 hour; remove from oven and let rest for 10 minutes before slicing.

This recipe (and IMO, any meatloaf recipe) isn't sacred or carved in stone; I rarely make the same meatloaf twice, because it's a great vehicle for whatever you have around the fridge. I'll add mushrooms to it sometimes, frozen sweet corn another, sweet red pepper, cheese, whatever; you name it, meat loaf will assimilate it and make it its own. :)

I'll halve the recipe to make a meat loaf for one or two; leftovers are never out of order. :)

Preheat oven to 350 degrees. Mix ingredients together well, pour into greased loaf pan, bake for 1.5 hours. Drain and serve (I usually serve with baked potatoes or cheesy mashed potatoes). Best. Meatloaf. Ever. Makes a superb cold sandwich afterwards. An author friend is including it in her next novel. It's the best.

a fistful of dry oatmeal (I use the old fashioned rolled oats)-probably equals about 1/2 a cup
pepper
2 raw eggs
1 dry package of vegetable soup mix.

mash it all together and put it in a greased casserole dish. bake at 350 for about an hour, hour and a half.

Very nice with some mashed potatoes and a vegetable.
I tried a ton of meatloaf recipes, until my family finally asked me to stop making it. Then I went to a potluck and a lady had brought this one. I got the recipe from her and *ta-da* my family actually likes it.

19. Ok, here is the recipe for the good one and the gross one
Good one:

3 parts lean ground chuck
1 part ground pork
1 part 1/3" cubes of day-old bread
1 egg
Salt
Pepper
Ketchup

Mix everything bug the ketchup together. Salt & pepper liberally. Mold into a loaf pan. Cover with a 1/4" layer of ketchup. Cook it up in a 350 degree oven for about an hour.

Weird/gross one:

Do the same thing as above, but put hardboiled eggs, a carrot, or even a frigging piece of sausage of a contrasting color into the middle so that when the loaf is sliced, it has freaking weird shit running through the center. Still freaks me out.

1 1/2 pounds hamburger
3/4 cup dry rolled oats (this makes it nutty and good)
1 tsp poultry seasoning (a nice sage-y taste)
2 eggs
1 medium onion, diced fine
1 tsp salt
black pepper
1/2 cup milk

Blend it all together and form into a loaf (I make a big round loaf on a pie plate)

In a saucepan, warm 1 cup catsup, 1/4 cup brown sugar and 2 tsp yellow mustard, and a pinch of nutmeg. That's the glaze for the loaf.

Bake at 375.

but...for a real pleaser around here...put half your meat mixture in the pan, add a layer of prepared stuffing (stove top herbed is good or your own made from scratch) and then the rest of the meat. Kind of mush the meat down to make a bit of a seal with the bottom layer.

Not sure if it's still on the box, I got the recipe years ago. It's on their website now.

Quaker Oatmeal Classic Meatloaf


Ingredients
1-1/2 pounds lean ground beef or turkey
3/4 cup Quaker® Oats(quick or old fashioned, uncooked)
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce or soy sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper


Preparation Steps

1. Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Shape meatloaf mixture into 10x6-inch loaf on rack of broiler pan.
2. Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.

Recipe Yield:
6 TO 8

1/6 of recipe

I'll have to try the BBQ sauce next time.

For something different I'll use salsa instead of ketchup & then add shredded cheddar cheese to the top for the last 15 minutes. It's good that way too.

if you like some sort of topping or glaze...which I do...just combine ketchup and brown sugar in a small bowl - about 1/4 cup of each. Mix thoroughly and spread on the meatloaf about 10 minutes before it comes out of the oven. Yum!

there's a very good, simple recipe on the back of the envelope for a meat loaf.

You can add other ingredients if you want, but we like the original recipe just fine.

Add a salad, some veggies and mashed 'taters ... yum.

32. Here's what I like to do - makes a great hamburger, as well
Take the ground beef, mix it with a lot of bread crumbs (or broken crackers), add some teriyaki sauce, mustard, ranch dressing, a little cayenne, maybe some onion powder and garlic powder (or better yet, some minced and sauteed onion and garlic), some sliced or minced mushrooms (cooked or uncooked), salt, pepper.

Mix it all together, and cook the SOB up!

Quite good with some melted swiss, gruyere, or jarslberg cheese on top; and especially good if you layer it first with some thick sliced bacon. YUM!
