The only good reason to stop in Encinada on the way down through Baja, other than to do the Immigracion thing, of course, is to gorge on fish tacos at the fish market. They're easy to make at home, too, but of course making all the condiments takes time.

4. As long as you're not shy about storebought salsa
I make homemade tortillas and fish tacos from scratch all the time, and it takes about 20 minutes. :shrug:

7. quick salsa fresca....

You're on! I don't get down that way very often though. :hi:


Proportions are approximate:

2 roma tomatoes, seeded and chopped
1/2 small onion, chopped
1 serrano pepper
fresh cilantro to taste, chopped
1/2 tsp salt
juice of 1/2 lime

Mix all ingredients, let sit for 20 min, stirring occasionally. Adjust proportions or scale up as appropriate for your tastes.


Quick chipotle-tomatilla salsa (very hot, smokey, and tart):

1 can tomatillas, drained and rinsed
1 (small) can chipotle chilis in adobo
1 med. onion, peeled and charred over a gas flame or in a hot skillet
1/2 tsp mexican oregano
fresh cilantro to taste
salt and pepper
juice of 1/2 lime

Throw all ingredients into a blender, process until smooth but still slightly chunky.


Quick crema:

Mix heavy cream and creme fraiche to a thick pouring consistency.

2. I had fish tacos just last night! (My wife had a burrito.)
The local Mexican restaurant is awesome (although they did put guacamole on my nachos last night :() - we celebrate the end of pretty much every week with some takeout.

20. They just opened one up fairly recently. I guess I'll go check them out.
I normally go to Qdoba, but they don't have fish tacos.

9. I've only had fish tacos once, at Houlihan's.
I liked them a lot, but I have no idea how authentic they were - finding a real fish taco in Western PA is probably a fool's errand. I think it must be a West Coast thing.

I tried to make my own at home once, and they were tasty, but not very aesthetically pleasing. I ended up with a bunch of fish and taco fillings on crumbled up taco shells on the plate.

anyhoo, taco shells are bad for making tacos. I use tortillas and make soft tacos. But you can also cook them yourself if you want it to be crunchy. Grilling is healthier than frying. mmmm... :9

That fish taco recipe looks good. I'll have to try that the next time I'm feeling ambitious.

In the Pittsburgh tradition, but with a little twist, I made cherry cheese pierogis today. I made regular pierogi dough, then concocted a filling using cherry dessert filling, cream cheese, and a little bit of sugar. Boiled them, fried them in butter, and they really weren't too bad. I want to experiment with the ingredients a little more - my daughter thought there was too much cherry, I thought there was too much cream cheese. Also, I think the next time I'll carmelize the butter somehow when I fry them - I think that would really enhance the flavor.

but I did try fish enchiladas and not a big fan. I think I will be plain and stick with beef and chicken tacos.

...do it by all means. They are excellent, and NOTHING like a seafood enchilada. The thing about fish tacos is that they are crunchy, and their flavor is partly dependent on the condiments added-- salsa fresca, supper hot chili pastes, tomatilla salsa, smokey chipotles, smooth, cooling crema, guacamole, a bright squeeze of lime, along with the fresh corn taste of the grilled soft tortilla and the crunchy battered fish. I disagree with proponents of grilled fish-- the crunch is vital to a good fish taco!

...like red snapper or something similar. Cut fillets into finger length strips. One mistake people often make is cutting the fish pieces too big. Make a batter that's approximately 1 part beer and 1 part flour, with a little seafood seasoning added. Coat the fish pieces lightly with flour, to help the batter stick, then dip in batter and fry in oil. I use a wok and do just a couple of pieces at a time. You want the fish soft and flakey, and the batter crisp and crunchy. Drain on paper towels.

Meanwhile, heat small corn tortillas on a griddle or in a skillet until softened and fragrant. Chop some fresh cabbage into threads. Fold a piece of fish onto each tortilla, top with cabbage threads. Serve with a selection of condiments. Salsa fresca, guacamole, chipotle-tomatilla salsa, crema, and a squeeze of lime are most popular in my kitchen. See the recipes up-thread. Enjoy!

Eat these right away, as they come off the heat-- fish tacos are best when very freshly prepared. They're street food, usually prepared and eaten on the spot. Don't be tempted to use more complex batters-- fish tacos are best with a simple, crispy coating.

26. I had them with grilled mahi-mahi and grilled tilapia at a couple of different
places while vacationing on the Monterey Peninsula in California a couple of months ago, and they were absolutely fantastic!! I really should try to at least attempt to make them at home, although I'm sure it won't be quite the same... (insert drooling Homer Simpson emoticon here)
