Moussaka (eggplant casserole), spanakopita (spinach pie), tiropita (cheese pie), dolmas (grape leaves stuffed with meat and rice) and baklava for dessert!
Hope you're happy! I LORVE Greek food! Now salivating. :9

Feta/pasta salad is a must!

2 10 oz packages of frozen spinach, defrosted 1 package of phyllo dough, defrosted 1 medium yellow or white onion one bunch green onions 6 eggs, beaten 3 to 4 sticks butter (margerine and olive oil will not work) 1/2 cup dill salt and freshly ground pepper to taste a combination of cheeses-I use 2 cups of mozzarella, 2 containers of Athens brand feta, and a couple of spoons full of ricotta.
Squeeze spinach. Cook onions in 2 tblsp of butter. Add spinach, and cook over low heat until all moisture is gone. Put in bowl, add eggs, spices and cheese. Put aside (in fridge).
Unroll package of phyllo dough, cover with a piece of wax paper and place a wet dish towel over wax paper. After removing each leaf of dough, replace the cover to prevent dough from drying out.
Brush an 9x13 pan with melted butter. Place one sheet of phyllo on it, and brush with more butter. Repeat 5 times. Add layer of spinach mixture. Butter and place 8 more sheets of dough. Spread the rest of the spinach mixture. Use up the rest of the dough (buttering each sheet). Score the top layer of dough into squares and bake for 1 hour (check frequently, because sometimes it takes less time) at 350 degrees.
It takes about 3 hours, but it is good. The phyllo dough comes in boxes of 2-you only need one package for one pie.

even the Windex!!!!
on edit: No Greeks coming to dinner, just Greek connoisseurs which leaves me slightly terrified. But with lemon and garlic galore, I should be good to go.
