Need a good (Apple, Pumpkin, Cherry, etc) Pie recipe.
With Thanksgiving coming up, I figure it's about time to start collecting recipes.

I know buying it in the store is a popular way to go, but over here in East Europe, it's impossible to find the Thanksgiving traditionals. Post your favs here. A few suggestions:

* Nothing with shortening, because of the trans-fats in shortening, and because I've not seen shortening in the year I've been here.
* A recipe with metric measurements would be nice, but not necessary.
* Tradition is nice, but creativity is a plus too. Recipes with a personal touch is a plus !!!

Hey, other Thanksgiving suggestions are welcome too.

1. for me it's not thanksgiving without pecan pie
in the five years i've made this pie i've never had a complaint

3 eggs, beaten
200 g white sugar
10 g butter, melted
120 ml dark corn syrup
120 ml heavy cream
5 ml vanilla extract
3 g salt
15 g chopped pecans
110 g pecan halves

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a small bowl, mix together the eggs, sugar, butter, corn syrup, cream, vanilla and salt.
3. Stir in chopped pecans and pour into pie shell.
4. Arrange pecan halves on top and bake for 40 to 45 minutes. Remove from oven, cool and serve.
Top with fresh whipped cream

Although the recipe calls for a baking time of 40 to 45 minutes, i check mine after 30 minutes as there is nothing worse than burnt pecan pie. the nuts should be a bit dark, but not overly so.

Try adding brandy, bourbon or chocolate chips for an extra kick

2. Here's the filling recipe for
a really great double crust apple pie:

2 Pie crust
1 ts Cinnamon
3/4 c Sugar
6 Apples; peeled, sliced
1/2 c Brown sugar
1/4 c Honey
1/2 c Raisins
1/2 c Pecans; chopped

Mix cinnamon and sugar. Mix cinnamon-sugar mixture with sliced apples. Mix apples with a combination of brown sugar, honey and raisins. Pile into pastry-lined pie pan, dot with butter and cover with slitted top crust. Bake 425 for about 50 minutes.

3. Sweet Potato Pie

1 slightly rounded cup of firmly packed brown sugar
2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/4 teaspoon salt
2 large eggs
1 1/2 cups evaporated milk
1 1/2 cups boiled, peeled, and well-mashed Sweet Potatoes (If you're outside of the US, don't use Yams. Yams overseas are sometimes a completely different thing than Yams here in the USA. The Yams here are actually Sweet Potatoes)
1 9" unbaked pie shell (preferably deep dish)

Preheat oven to 425 degrees F. Blend together salt and spices. Beat eggs with milk and combine with all other ingredients. Beat mixture until smooth. Pour into an unbaked pie shell. Bake for 15 minutes, then reduce heat and back at 350 and bake until knife comes out clean. (Usually between 20 minutes and 35 minutes)

5. Apple pie recipe
Take an old Powerbook G3, wrap it in dough and bake at 350 for 40 minutes or until the top is crispy and the juices flow out around the keyboard.

6. your best Pumpkin Pie is on the back of the libby's canned pumpkin
it does not fail. But can you even get canned pumpkin over there?

More research is required here...hey, cross post this in the Cooking and Baking DU Group. Those folks love to assist in recipe finding.

Butter can always be substituted for shortening, even in the crust, which is where the shortening usually ends up.


I will grab some cook books later and post back. I have buttermilk pie, fudge pie and pecan pie recipes that absolutely rock.

7. update to above: good pumpkin pie recipe
1 9" unbaked deep dish pie crust

Filling:


1/2 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
2 eggs
1/2 cup Karo light or dark corn syrup
1 15 oz can pumpkin
1 12 oz can evaporated milk


mis sugar, salt and spices in a mixing bowl. Add eggs and beat slightly. Add remaing ingredients and blend well. Place crust in a 9 inch deep dish pie plate and pour filling into the pie crust. Don't forget to prick the bottom of the pie crust with a fork before filling.


Bake in a 425 degree preheated oven for 15 minutes ; lower the oven to 350 and bake and additional 40 or 45 minutes or until knife inserted in center comes out clean. Cool a minimum of 2 hours before serving.


Cinnamon Spice whipping Cream

1/2 pint heavy cream
2 tbsp brown sugar
1/2 tsp vanilla extract
1/4 tsp cinnamon
dash ground nutmeg.

chill a metal mixing bowl and the beaters in the freezer. Also chill the cream in the freezer approx 30 or 45 minutes.

Beat the cream in the cold bowl with the cold beaters. as it begins to thicken gredually add the sugar, spices and vanilla. Beat until nice and thick
