Mushrooms, onions, and spinach sauteeing for a quiche with feta and sharp cheddar cheeses. Served with baked sweet potatoes! Yum! :9

what's in it.
Roughly chop or slice about 6 good sized button mushrooms and 1/2 a medium onion. Saute in skillet with butter, salt and garlic powder. When about half way done, add about 3/4 or so cup of frozen spinach and continue to saute for about 2-3 more minutes.
One premade pie shell of your choice (9" deep dish) 6 large eggs, beaten with about 1/2 cup milk
Pour eggs into pie shell and add the mushroom, onions and spinach. Add feta cheese (lots coz it's so yummy! - about 1/2 cup,) sinking it into the egg mixture. Top with about 1 cup of finely shredded cheddar cheese. Optional: sprinkle top with just a little nutmeg.
Place on cookie sheet and bake for about 30-35 mins. at 350 degrees (or until well set and golden brown.) Remove from oven and allow to sit for about 5 mins.
Enjoy!

That sounds so good........unfortunately (or not) husband does not like either mushrooms or spinich, so I'll just have to eat the whole thing myself. Damn.

I'm also roasting a bulb of garlic from a friend who grows it. The smells are killing me!

Make the pie shell a 9" deep dish.
And it tastes as good as it was smelling! Yummmmmmm!
