what's in it.

Roughly chop or slice about 6 good sized button mushrooms and 1/2 a medium onion. Saute in skillet with butter, salt and garlic powder. When about half way done, add about 3/4 or so cup of frozen spinach and continue to saute for about 2-3 more minutes.

One premade pie shell of your choice (9" deep dish)
6 large eggs, beaten with about 1/2 cup milk

Pour eggs into pie shell and add the mushroom, onions and spinach. Add feta cheese (lots coz it's so yummy! - about 1/2 cup,) sinking it into the egg mixture. Top with about 1 cup of finely shredded cheddar cheese. Optional: sprinkle top with just a little nutmeg.

Place on cookie sheet and bake for about 30-35 mins. at 350 degrees (or until well set and golden brown.) Remove from oven and allow to sit for about 5 mins.

Enjoy!

Edited to add pie shell size!

That sounds so good........unfortunately (or not) husband does not like either mushrooms or spinich, so I'll just have to eat the whole thing myself.
Damn.

:P

It'll be his loss.

I'm also roasting a bulb of garlic from a friend who grows it. The smells are killing me!
