Favorite vegetarian Thanksgiving dishes?
I realize that yes, it's Thanksgiving, turkeys and basting and all that - but not everyone is so carnivorous. ;-)

Any veggies out there care to share their ideal Thanksgiving meals?

Unturkey, stuffed with a Tofurkey, stuffed with a field roast. Tofurkey giblet gravy in ample supply.

You wait...someday, I'll build this Unturducken, a/k/a Unturfurkenroast.

13. Damn, now I want to make one...
just to say I did it. Although, I'm not a huge fan of Tofurkey, I would eat it just to say I did. And I do really like UnTurkey and field roast.

4. I bought a Quorn roast

In past years I got the Tofurkey and all the stuff that comes in the big box (love the mushroom gravy), but I like the flavor of the Quorn roast better. I had to go buy canned mushroom gravy for my mashed potatoes. I may make a bit of stuffing for myself too. I'm making glazed carrots and sweet potatoes, cranberry/orange relish, corn, and some vegetarian hors d'oeuvres (though I cheated on those and bought frozen. lol).

we usually have 2 kinds of stuffing (this year we are making one for stuffing a whole pumpkin :9)
home cranberry of some sort
a corn pudding, so nicely called "white trash" which is just corn, creamed corn, margarine, cornbread mix and i think some sour cream.
we have a sweet potato pie AND a sweet potato torte
mashed potatoes
this year we are also doing a winter squash salad

now Im hungry

14. Here's a lacto-vegetarian dish (ripped off from a Mexican restaurant) that I think will
go beautifully at Thanksgiving. It can be easily veganized if you skip the sauce or use a tomato-pepper sauce, and omit the cheese garnish.

1. Roast some red peppers and tomatoes (in separate pans) at high heat until done. Set aside the peppers. Puree the tomatoes with however much canned chipotle you'd like.
2. In the bottom of a greased, 9-inch springform pan, stick a 1/4-inch layer of masa dough. (You can use the instant, add-water masa harina -- available by the cornmeal or in the Mexican section of a decent grocery store). Bake in a 350 oven for 20 minutes.
3. Add the following ingredients in layers (seasoned to taste):
A. 1/3rd of the tomato sauce
B. Black beans with green chiles (canned is fine)
C. Sauteed onions and garlic
D.The roasted red peppers
E. 1/3rd of the tomato sauce
F. Thinly sliced or mashed cooked (microwave is fine) squash of choice
G. Sauteed spinach
H. Top with the rest of the tomato sauce

4. Put the fully loaded springform pan into a roasting pan, and put into the 350 oven. After 10 minutes, add an ice cube or two to the pan to add humidity to the oven. Bake for a total of 20-30 minutes.

5. Meanwhile, make a roux of 1 tbsp neutral oil, and 1 tbsp flour. Cook on the stove, slowly, until golden. Add 1 cup milk and 1 minced canned chipotle. (More if you like it hot.) Cook until thickened, then puree until smooth. You can skip the sauce if you want, or use a tomato-based sauce (with chipotle if you want it spicy, or cumin and mexican Oregano, or basically what looks good, instead.

6. Remove from oven, let set for a few minutes. Carefully undo the springform pan. Serve over sauce, garnished with a few shreds of chihuahua cheese or queso fresco.

16. Veggie/Vegan New England Baked Beans
2 cups white northern beans

1 large onion, peeled and halved

1/4 cup very light (cheap) olive oil

1-2 teaspoons salt

(the non-veggie version uses 1/4 lb salt pork or bacon instead of oil and salt)

1/3 cup molasses

1/3 cup brown sugar

3 teaspoons dry mustard

****

Soak beans overnight in cold water changing water frequently

Parboil beans in 3 changes of water until the skins can be removed by a light touch of a spoon (about 20 minutes).

These steps deprive the beans of their musical powers...

Drain hot beans and place into a bean pot (or deep casserole dish with a lid) with other ingredients.

Add enough water to just cover the beans

Heat in oven to 350 degrees for 20 minutes

Reduce oven temp to 225 degrees and bake for at least 8 hours (adding small amounts of water if needed).

21. A little bit unusual, but completely delicious
My mom, being the greatest mom in the land, would always cater to my own and my friends vegan tastes when I was in college (sadly, I have fallen off the vegan bandwagon and am now nothing but a veg-aquarian). She made up this recipe of putting dolmades (the vegan kind) in a casserole dish, slathering it with marinara sauce and sprinkling pine nuts on top. Into the oven until it's piping hot. Completely delicious and oh, so easy!
