Chicken, andouille, shrimp (well, no shrimp yet, going in at the end).

1. Unusual combination

We never mix chicken and seafood in one gumbo.

IMHO chicken and sausage gumbo is the best gumbo there is. Sure, seafood gumbo is really good. Crabs, shrimp, who could turn that down?

But man, chicken and sausage gumbo! Ca C'est bon!

I'm glad I married a Cajun.
