Fettuccine all'Amatriciana
Serves 6
Prep Time: 15 minutes
Cook: 30 minutes

Ingredients
2 oz Lean Smoked Bacon, cut into 1x1/4x1/4 inch strips
Tomato Sauce
1/4 tsp Crushed Red Pepper
1 oz (1/4 cup) Grated Parmesan Cheese
1/4 oz Shredded Fresh Basil
2 Tbsp Romano Cheese (.5 oz)
1/4 oz Shredded Fresh Basil (1/2 cup)
1 lb(s) Fettuccine Pasta

Procedures
Place bacon in a large skillet over medium-low heat. Cook until bacon renders its fat and begins to brown.

Stir in crushed red pepper and cook one minute. Add tomato sauce and bring to a boil.

Meanwhile cook Fettucine in a large pot of boiling salt water until al dente.

Drain pasta, reserving 1/2 cup of cooking liquid, and return it to the pot.

Add tomato sauce and reserved pasta cooking liquid. Bring to a boil and remove from heat. Stir in grated cheeses and basil.

Toss to mix and serve immediately.

8. That is unacceptable.
If Mario Batali were dead, he'd be rolling over in his grave.

7. I prefer the Steak with Gorgonzola....
My excuse? My dearly beloved works at an Olive Garden, so I'm subjected to their food on a regular basis :D

13. Bacon is loaded with nitrates. Or is it nitrites?
Edited on Mon Nov-20-06 06:39 PM by trof
It's probably both.
Anyway, it's really really bad for you.
And it's meat.
That's not good either.
Salted water?
Salt is bad for you.
And I hope you're using pure distilled water.
The rest is full of crap.
Although distilled water will leach all the good, necessary minerals out of your body.
It's a trade off, I guess.
:eyes:

Oh, and NOT bleached flour fettuccine.
And it's 'fettuccine', not 'fettucine'.
Don't you have spell-check?
Use ONLY whole wheat flour.
And preferably make it from scratch.
Do you know what kind of crap they put into that dried out big-food-corp commercial stuff?

Anyway, thanks for the recipe, and bon appetit.
:-)

17. Difficult assignment.
And I'm already 3 Scotches into the evening's 'festivities'.
Or is it 4?
No matter.

The so called 'hot dog' is neither 'hot', nor 'dog'.
Except in a few cultures where some canine DNA may be present.

Oh god. I just can't do this right now.
My glass is once again EMPTY.
OK, I can fix that.
Maybe later.

Meanwhile, google 'sausage making'.
:-)
