DAMM MITT! I found a great potato recipe, tho't I bookmarked it, now I can't find it!!
It's not in my history. :cry:

If anyone has a recipe for potatoes sliced 3x lengthwise, with onions stuffed between the slices, baked, please let me know. It also calls for red peppers. I don't know what other ingredients, how long to bake, what temp, etc.

*This recipe starts with 4 whole baker potatoes

Bake whole potatoes wrapped in foil for 45 min./400 d. oven

Combine the following in a bowl:
one whole large red onion chopped
2 c. chopped scallion
2 whole large red bell pepper chopped
1/3 c. capers
Fresh chopped parsley to taste
Ground pepper to taste
1/4-1/3 c. virgin olive oil

Toss ingredients together.

At the half hour of the cooking time, saute the mix in 2 Tbsp. butter.

Potatoes:
(save foil for the re-wrap)

Slice potatoes in half lengthwise, then cut three lengthwise slices inside each half of the meaty part of the potato with out slicing through outer skin. Press open each potato half, and spoon in the sauteed mix into the sliced areas.

Wrap completely in foil making sure potatoes are flat/sauteed mix side up
Continue baking at 400d. for 15-20 min.
Open foil top to expose the sauteed area
Sprinkle with cheese (Your choice, but am thinking Parmesan would be yummy :d )
Broil until cheese is bubbly and browning.

Myself, I'd leave out the red bell peppers & capers, but..:wow: My mouth is watering!!

10. You made that up?
Dayum. What can you do with :rummages in pantry: canned tomatoes, black-eyed peas :rummages in fridge: chicken that should've been frozen but now MUST be cooked, and celery?

Maybe I'd've done better to wrap them in foil. I did just the potatoes & onions, well seasoned and drizzled with olive oil. The potatoes were underdone and where the onions weren't contained by the potatoes, they burned. :shrug:
