27. After 30 minutes, cover the breast with 2 layers of foil.
That's what Alton brown says. He's talking about a brined turkey though.

Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.

29. Hickman? Any relation to The Hickmen? ? ?
I'm going to see two of my favorite bands in a few hours. One of them is called The Hickmen (after some dude named Hickman). I don't think they know how to cook a turkey, though they do talk turkey about some things. I won't even go into the other band called The Jack Fris Radio Choir. You've never heard of them, but you will, oh, you will.
