Need some "just in case" ideas for the big fresh red snapper I bought
at the FABULOUS Lee Lee's Market up in Chandler this weekend. Bought it to grill, but dang if it doesn't look like we might get a storm this evening. Please give me some other tasty alternatives (and side dishes) you might have? Thanks in advance.

1. Season with salt, pepper, cayenne, garlic
Pan sear and then bake at 375 until done.

Serve with jasmine rice and bokchoy.

2. I was already going to do rice (and I think I even still have some Jasmine)
but I know I don't have any bok choy and would like to avoid driving to town. Never thought of going "Asian" though - being close to the border my auto-food ethnicity is Mexican, hmm I do have some packaged frozen "stir fry" vegs though. Keep them around for quick meals when everything else is gone...maybe you are on to something...

4. Next time buy some fresh spinach. Several handfuls...
...beneath your fish filets work magnificently if you broil or bake them!

5. At the market where I got the fish I saw banana leaves for sale -
and now I have seen recipes for using them too...I have a couple of those basket type things especially for doing fish - they work pretty good.

9. I have bananas in my back yard. They'll keep your fish moist...
but I love the spinach when cooked with it.

11. I noticed they would deep frah them right there at the fish counter if you wanted.
Might have to try that next time I'm up that way.

I think you could batter and deep fry dog poo and folks would eat it up!

10. Yeah tell me about it - It was a 3 hour dirive home from where I got it.
Fortunatley I have family up there or I would not have any reason to go, nor a fridge to borrow for the afternoon or overnight. If you plan ahead (or buy a cooler when you go there) that can be a good thing to look for on an excursion to the big city :rofl:
