Cooks: help me make a soup (or something) with these ingredients: |

I have 3 bunches of celery (I kept forgetting I bought it already - now have 3) 2 zucchini 1 onion 1 green bell pepper chick peas jasmine rice parsely gorgonzola cheese parmesan pecorino lots spices
Any combination of the above?
I have no tomatoes or potatoes, which I know are often put into celery soup. No meat, as we're mostly vegetarian.
Any ideas? I'm not a very instinctive cook - I can follow recipes extremely well, but invent? Not really.

1. Here's celery soup without potatoes or tomatoes |

3 cups sliced celery, including some leaves 1 tablespoon butter 1 cup sliced onions 1/2 Cup sliced scallions (including green) 6 cups water 1 teaspoon salt 1/8 teaspoon freshly ground black pepper 1/2-teaspoon thyme leaves 1 1/2 Cups (approximately 2 1/4 ounces) loose, very thin egg noodles, sometimes called vermicelli 1 cup milk
Peel the celery if necessary with a vegetable peeler. (Save the peelings; they can be used in stock.)
Melt the butter in a pot, and add the celery, onions, and scallions. Sauté gently over medium heat for about 2 minutes, just enough to soften the vegetables slightly. Add the water, salt, pepper, and thyme. Bring to a boil, cover, and simmer for 15 minutes.
Drain the soup and reserve the liquid. Place the solids with a little liquid in a food processor and liquefy; the consistency should be thin.
Return the solids and liquid to the pot and add the noodles.
Bring to a boil and simmer 3 to 4 minutes, until the noodles are cooked.
Add the cup of milk, stir, and serve in individual soup bowls. To make the soup a bit richer, put a dab of fresh butter in each bowl and pour the soup on top. The yield should be approximately 7 cups.
You could substitute the bell pepper & zucchini for the scallions. Replace the noodles with the rice. If you don't have milk, maybe stir in some of the cheese to make the soup richer?

don't have scallions, but do have garlic. Thanks! I just don't want the celery to go to waste and though I could have some soup on hand for a day or two...

The ringers in your list are the jasmine rice and the stinky cheeses. Those don't go together. Omit the jasmine rice and everything else could work as a sort of stew, with the cheese grated or cubed to add to the hot soup. Or you could omit all the cheeses but add curry powder to the stew, and serve over rice.
Do you have garlic? That would add a lot to most stews.

saw a recipe for celery soup with blue cheese, but it had potatoes to no doubt carry some of the cheese...
I do have curry powder.
Will do some experimenting today. THanks for the ideas.

I don't think I can help...but I know that if you had some arborio instead of Jasmine rice you could make a very nice risotto with that list.
