Before the Michigan game, Ohio State allowed no more than 10 points. I remember that Penn State couldn't do anything. So how did the defense fall apart?

OSU was clearly outplayed. I blame the coaching staff. (That's an easy thing to say in retrospect, ain't it? I'm no kind of armchair QB, but the Gators were always one step ahead.)

You won't hear too many people dissing "St. Jim" Tressel, but the game plan sucked big time. Given that they knew Florida's defense was fast and aggressive, you'd think they'd throw a screen pass or two, draw play, reverse, run Smith out of the pocket -- all of the things you do to neutralize defensive speed. They ran two or three options. That was it.
When Smith ran out of the pocket, he found some yards, but they kept him in the pocket to get sacked five times -- Smith ought to sue Tressel for malpractice. That performance will cost Smith a half million dollars off his signing bonus.
And their defense? Within four plays it was obvious that Florida knew how to find the holes in the zone defense, so what did Tressel do? Stick with a four man rush and zone defense for virtually the entire game. No adjustments at halftime -- just sticking with a game plan that clearly wasn't working.
And going for it on fourth down when you're deep in your own territory -- in the first half, no less? Tressel should be required to reimburse every Buckeye fan in the stadium for their ticket and airfare. As it is, that was four hours of my life I won't be getting back.

They didn't play anyone close to the caliber of Florida this year. Florida, meanwhile, played LSU and Auburn, both of whom would win the Big 10 running away.

but in the Cotton Bowl, Auburn's only 2 touchdowns came from turn-overs. Not exactly an offensive powerhouse late season.

I just did not see Auburn as a powerhouse based on that Bowl performance. They barely edged a mediocre Nebraska team.
They won, but it was ugly.
To claim they could have won the Big-10 is a stretch.

Not that the Big 12 was much good this year either, but Nebraska does look like a program on the rise. Their up and down play is indicative of a team that is still finding itself, but I don't think they exactly rolled over and died against anyone this year, USC included. And please note, I fucking completely hate the Cornhuskers and hope they never win another game, so this kind of praise is painful to type.
Further, Auburn has never had a style of play where they blowout opponents. A lot like my favorite New England Patriots, they often feature well prepared teams that play great defense and do what is necessary on offense. They beat one of the best teams in the country, LSU, by a 7-3 score. They only lost to Georgia and Arkansas, which went 9-4 and 10-4 respectively, and did beat the eventual national champions. I don't think it was a stretch at all to say they would've won the Big 10, especially after Michigan and Ohio State's performances.

the Huskers were beaten by Oklahoma State and nearly by Kansas - with their other losses - Texas and Oklahoma, right?
They finished outside the top-25.
And they still were beaten by only 3 by Auburn. And I say again, the 2 Auburn TDs were as a result of Husker turnovers.
Sure Nebr is improving - Callahan is making great progress. But they were still pretty mediocre.
I still do not see them near the top of the Big-10.

Tennessee was without their star receiver, but Morelli looked has good as he ever has against a decent team. We seem to do well against SEC teams other than Florida.
