will they be any good after they've thawed?

1. I freeze mine
Both white and wheat. They appear to be just fine. (I let mine thaw naturally--only takes a couple of minutes--instead of putting them in the microwave.)

2. I do it all the time
just don't try to "quick thaw" in the microwave or they can dry out.
