I happened to have a jar of unsalted roasted peanuts and pretty much on a whim I decided to try and make some home made peanut butter. I regularly make myself cashew butter but never made peanut butter. Not much of a stretch of course but I just never did.
Added honey and a little bit of cinnamon.
Not to unduly pat myself on the back or anything but Wow this tastes good! I'll put a little less oil next time to keep it a bit thicker but there will definately be a next time!

unsalted and roasted
Try 1/4 cup of oil - I happened to have walnut oil so I used that but I'm sure peanut oil will taste pretty much the same in the end product
1/2 tsp salt
2 tblspns honey
1/4 tsp cinnamon
Food processor for maybe 2 mins (I lost track of time but this is the key I think...you have to be paitent and stop and scrap off the sides every once in a while, be patient and you might get away with less oil)
on edit: fixed cinnamon amount

I use 2/3 cup of Walnut oil for the cashew butter and I don't add any cinnamon and run the processor for only about 1 min.
Oh and I usually spread it on a sliced apple (Crispins or Cameos are particularly good matches for this) or sometimes even make a cashew butter and apple or blueberry (if I have them during the season) sandwich on whole wheat.

these days, shelling roasted peanuts and using only 1 TBSP of oil (I use plain canola oil)and 1 TBSP of honey to 2 cups of peanuts. It has to be refrigerated which makes it hard to spread if you don't take it out ahead of time to let it come to room temp first but the taste is wonderful.

I don't go for sweets as a rule and don't add sugar to anything but honey and to a lesser extent real maple syrup is a definite weakness of mine.

honey, molasses, and real maple syrup. Trying to get away from the HFCS in the cheap pancake and waffle syrups. I never used to care much for molasses but my husband likes it and I'm starting to.
