Dessert at the Prophets - Brandied Plantains Flambe
Slice a plantain into ovals; set aside. In a large deep skillet pour 1 cup brandy, 1 cup brown sugar, and 1 tbsp butter. Add 1/2 tsp cinnamon, 1/2 tsp ground coriander, 1/2 tsp ground cardamom, and 1/2 tsp ground ginger. Heat on medium until it begins to boil. Add plantains. Let boil for a few minutes, then ignite the surface to burn off the alcohol. Continue cooking until brandy sugar sauce thickens. Remove from heat and let stand a few minutes. Serve over vanilla ice cream.

I like a sweeter brandy for this recipe. I use Paul Masson Grande Amber. It's sweet, so it sweetens up the plantains a lot. Plus, it's cheap.
