The admissions person at the college I went to - good looking, no wedding ring, nice personality, I was in drool mode.

Do I do the invite for a date question or don't I?

IMHO you should wait until you know the outcome of the interview before you ask this person out.

You should wait until asking the person out has no relevance to whether you get in or not.
As far as afterwards, it depends on the college atmosphere. For example, if you would start dating and then broke up with the person and then quit the college because of your hurt feelings, would the admissions person possibly face any professional repurcussions.
