It's made out of brie. It's just dried out from exposure. It's edible...it tastes bad, but it's edible.

I usually save them if I know I'm making veggie stock in the next few days and throw them in. Parmesan rinds too.

Edit: As someone pointed out upthread. It's moldy. That's why it's white.

If you meant to ask "is it edible?", then the answer is yes, it is edible.

The rind is mold that grows on the cheese.

And I don't find it gross just because it's mold - I love blue cheese and other moldy stinky cheeses. I find it gross because it's gross.

I do believe that at some point in the cheese aging process, the surface of the cheese is put through a simple treatment, like salt being rubbed on the surface or the cheese wheel being bathed in a warm salt water bath and rubbed with wax. The purpose is to create that "skin" around the cheese to preserve, protect, and age the cheese,

I have eaten a pretty good amount of brie and similar cheeses and I am still here. There is a kind of after taste that I don't like. Maybe your supposed to wash it down with wine or some other cool, refreshing beverage.

FYI-If you can try to get raw milk derived cheese, flavor is better.

18. Unless it is wayyy too old, it is edible and very good.
Some cheeses (not sure of types) have penicillin mold growing on them. Makes me wonder if this keeps people healthy and/or is a problem for those with pcn allergies.
