The is probably the greatest salad dressing recipe ever. |

From the interwebs. I went looking for this recipe because Maggiano's has the most fabulous house dressing and we're having a cook out today for Father's Day.
Enjoy. Extremely simple to make, although I did halve the recipe. Cheap, too. The most expensive thing was the dry mustard, but I only used about 1/8 of the can. Oh, and I made it in my blender because it was right on the counter rather than digging out the food processor.
Maggiano's House Italian Dressing:
1 oz. Colemans dry mustard 1/3 cup sugar 3/4 cup water 1 oz. garlic -- finely chopped 1/4 cup red vinegar 1 cup white vinegar salt -- to taste 1 qt. corn or canola oil 1 cup virgin olive oil 2 tsp. crushed red pepper 2 tsp. fresh ground pepper 1 tsp fresh oregano
Combine mustard, sugar, water, red and white vinegar, and salt in food processor. Mix until smooth. Slowly drizzle in the oils, continue to blend for 2-3 minutes. Transfer to bowl and add remaining ingredients with wire whisk. Store in sealed containers in refrigerator. This makes 2 quarts of dressing.

fresh spinach, red onion, feta cheese, a little hard boiled egg, crumbled bacon, and that dressing, uummmmm.

...to about 1/4 the specified amounts-- maybe eliminate the water altogether, frankly-- use the recommended amount of olive oil and red vinegar, adjusting for taste, but skip the canola oil and distilled vinegar altogether. That should get you less than 2 cups of dressing that tastes pretty darned similar....
