slice in 1/4" slices down the length so you have slabs, brush a bit of olive oil on them and ground salt & pepper and roast either on a grill or in the broiler. You can also do it on a gas range if you're careful and don't use any/much oil (just enough to get the salt & pepper to stick). When I do veggie roasting inside I use the grill from my toaster oven or a cooling rack as my "grill" and if you're worried about a mess, you can use foil, or just use your oven. Just roast them a short time - you want them mostly raw with a slight browning/blackened face on each side.

I cut them the same way, but coat them with basalmic vinegar, put them on the grill, and sprinkle toasted sesame seeds on them shortly before taking them off.

I use a little peanut oil, garlic salt, and ground pepper...great on burgers...even vegie burgers. ;)

a 425 degree oven with chopped garlic, shallots, olive oil, and oregano. Turn half-way through to get nice caramelizing. Sometimes I add chopped plum tomatoes, and/or fresh mushrooms (baby bellas work best).

grilled: split long wise ,(big ones) brush with olive oil, grill
stuffed: (big ones again) scrape out most of insides, chop and mix with other ingredients (meat, cheese, onions, garlic, etc etc, and bake for 20 to 30 minutes 350 or 375
sauteed: slice into thin rounds, add thin sliced onion and garlic, saute in a combo of butter and olive oil till done, salt to taste (good over rice if you used too much oil and butter)
also sauteed with same plus chopped tomatoes - good over pasta

The food network has interesting variations. This link is a basic one if you ignore the instruction to use different colored Bell peppers (use a plain old green one) and feel free to use fewer herbs and/or just chopped parsley instead. http://www.epicurious.com/recipes/recipe_views/views/101629I make it from memory and not with measured amounts. Sorry. I can say that it pays to make it in quantity because you can freeze the leftovers.

Honestly, it's one of the few vegetables I don't really like.
My parent's way of using the surplus was zucchini boats, kind of like Kali's idea -- slice in half, scrape the flesh out, mix with onion, sausage, and parmesan, return to zucchini "corpse," wrap in tin foil and throw on the barbecue to cook the vegetable until tender.

10 c. ground zuch 2 chopped onions (I prefer white) 1 c diced hot peppers (I use mild 'cuz I'm a wimp) 1 chopped bell pepper
Mix well, add 3T salt.
Let stand overnight. Wash well, 2X, in cold water.
Add: 2 1/2 c vinegar 4 1/2 c sugar 1/2 tsp black pepper 1 tsp celery seed
Cook 30 mns or until clear. Pack in sterilized jars, process 20 mn. in water bsth.
This stuff ROCKS. I like it best on toast...no joke, but it is also good as a glaze on pork.

You'll need tortillas, zucchini, shredded cheese, red or green sauce, maybe a little onion if you like. Lightly oil a casserole dish, begin with sauce and then proceed to layer the ingredients. Finish off with cheese on top. Bake until warm and bubbly. I like to use corn tortillas, chihuahua cheese and salsa verde. You can add in spices to your taste. I don't saute the zukes and onions first, I prefer to bake it longer at a lower temp. Might even be able to do it in a crock pot although I've never tried it that way.

34. Chocolate Chip ZUCCHINI Muffins Or Bread |

3 eggs 1 c. vegetable oil 2 c. sugar 2 tsp. vanilla 3 c. shredded zucchini 3 c. all purpose flour 2 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. chocolate chips 1 c. chopped walnuts
Combine eggs, oil, sugar, vanilla; beat until smooth and thickened. Stir in zucchini, flour, soda, baking powder, salt, spices. Fold in chocolate chips and nuts. Spread batter in 2 greased 9 x 5 x 3 loaf pans or in muffin cups, filling cups to about 1/2 full. Bake loaves at 350 degrees 1 hour or until wooden toothpick comes out clean. Bake muffins at 350 degrees for 20 minutes.
Delish!
Mr Gen has been making a Zucchini stew -- with green peppers, caramelized onions, Italian sausage, plum tomatoes, garlic, fresh herbs, and melted mozzarella and Parmesan cheese sprinkled on top.
We had it last night for dinner. The Zucchini squash is the garden gift that keeps on giving.

I haven't been posting much, because we divide our time up in the summer between our house in LeRoy (computer) and a little cottage we have at Silver Lake (no computer). Our Silver Lake cottage does have an internet connection so that my brother can bring his laptop home from Atlanta, but I'm too lazy to unplug my desktop and haul it over there -- hence no connection. There is some talk of getting a community laptop for the cottage, but part of me wants to keep the cottage media free. My only contact with currant events down there is my radio tuned to Air america.

I also make Zucchini cookies. I'll have to dig that recipe out, and pm it to you.
I also made the relish one year when we had too many to possibly eat and give away.
There's a homeless shelter in Rochester that my husband has dropped off surplus produce to. If you have a whole lot, see if you can find a charity organization to give some to.
I also heard you can shred it and put it in freezer bags and freeze it.
