1. Sounds good. Howsabout some thinly sliced baby carrots and
baby corn (you know, those tiiiiny little ear looking things in with the snow peas, for a splash of color and taste? I think the presentation will be very nice.

3. I meant to also add
that if you go with that, I don't know what sesame oil you use, but when I cook veggies with it, I like to add a good amount (but not to overwhelm) of ginger to it. Nothing beats a good sesame ginger. Well, unless you don't like ginger to begin with. Then it sucks.

18. I just tried a new recipe tonight that you might like
I'm growing asian eggplant and they're producing like zucchini. So tonight I did a Chinese eggplant/basil dish.

You'll need 1 good size eggplant; about 2 cups of fresh basil, whole leaves; garlic. Optional; 1 hot pepper; some minced ginger; a couple tablespoons of finely chopped lemon grass.

Julienne the eggplant. Chop garlic...how much depends on your taste. Pour a couple tablespoons of peanut (or olive) oil into a wok or deep skillet. Saute the garlic (hot pepper, ginger, lemon grass if you want to use them) until it is just turning brown. Add the eggplant and saute for 2 or 3 minutes. Add basil and stir until wilted.

Mix with rice or rice noodles with a bit of soy sauce and/or sesame oil.

We ate this as a side with chicken but it doesn't take meat of any kind in the prep.

25. I imagine you could also do it with spinach in place of the basil
but I really love basil. I did mine with all the optionals because, except for the ginger and garlic, I've grown it all myself.

4. wine or some other libation?
something fruity and light? A Riesling, perhaps.

That sounds like quite a spread. I think you are good, foodwise. Maybe another side dish, either a complex carb or vegetable. Maybe a rice dish?

5. I don't think you need another entree, but another side dish would augment the meal.
I agree with the suggestion of a rice dish or another vegetable dish. I might be inclined to go with a mix of brightly colored summer vegetables.

8. Boiled New Potatoes sauted in butter and fresh dill
Cut them in half and boil gently until they are just about done, then saute them in butter and the fresh dill. The butter and dill will be a slightly different accent to accompany the snow peas.

Gotta have taters man. Even Hobbits know PO-TA-TOES.

20. Now you've made me want to eat new potatoes....
Though I'd use parsley with the butter instead of dill. Not fond of dill.
