So I am dumb enough to spill nail polish remover on the furniture
It also removes the varnish!

Is there anything I can do to restore the dresser top to its lovelier prior condition?

Maybe cross-post this in the DIY Forum...?

Izt does sound like you will need to refinish the top.

~That requires even surface sanding with medium and then fine and extra-fine sandpaper.
~Make sure all the sanding dietrius is off the surface.
~Find a stain that matches the original (Take a drawer intot he hardware store with you for good matching)
~Read up on how to apply stain as it depends upon what type of and/or brand of stain you use.
(there are water-based, poly-based, and gel stains out there. Water-based is the easiest to use.)
~If you choose to seal with a varnish, best to use one that is from the same manufacturer as the stain you used.

Do some googling. There are lots of sites that tell you "how to" (and enter the "how to" in quotes just like I did here, to get site specific search results.)
