Coming back to earth generates a lot of heat and they did fire up the engines to re-enter the atmosphere.
I got to see Enterprise (the first shuttle that they glided off of the 747 jet back in the late 1970s in Huntsville, AL at the space center. It's not that big. The fuel tank are huge though. I got to walk right around it on the ground (literally, I was just about 25 feet away from it!) and then wlak througha full size mock up of the cockpit! It was an awesome experience and the closest I'll ever get to a shuttle again!

...an alternate method of dissapating heat is required.
Somehow ammonia is involved and what you're hearing is the venting of the ammonia.
