Want a good recipe for Spinach Artichoke Dip?

Of course you do. I pulled this online - from The Olive Garden. It rocks and you MUST try it. Today. Oh, and add some shredded Asiago at the end to make it perfect.

Serves 4

Ingredients

2 Fresh artichokes
1 Lemon, juice squeezed
1 tsp Salt
OR
1 can(s) Artichokes (drained and sliced)
1 lb(s) Cream cheese
8 oz Mascarpone cheese
2 Tbsp All purpose flour, sifted
8 oz Grated parmesan
1/4 tsp Fresh Thyme leaves
1/4 tsp Crushed red pepper
1/8 tsp Ground black pepper
1 Tbsp Fresh Italian parsley, chopped
1 Garlic clove, minced
1 oz Green onions, chopped
1/4 tsp Salt
4 oz Fresh spinach, chopped


Procedures

Preparation with Fresh Artichoke

- Boil artichokes in 3 quarts water with 1 tsp salt and lemon juice.
- Let artichoke cool down. Clean, peel and slice artichoke.
- Follow Dip Preparation below using fresh artichokes.

Dip Preparation

- In a large bowl, mix all ingredients.
- Spray a 14" non stick baking pan with Pam; fill pan with mixture.
- Bake at 325F for about 25 minutes or until internal temperature in the center reaches 165F.
- Serve hot with toasted Italian bread.
- Sprinkle top with parmesan cheese.

3. It's a solid recipe and it's good. Mascarpone makes the difference.
Yup, Olive Garden. But, I make it my own. I pan roast the garlic and add far more than they specify. Oh, and the Asiago. I find every excuse to use that.

It's worth it, I swear.

8. Talk about synchronicity...
Not being a big cheese fan, I must confess not to have given spinach artichoke dip a single thought in my entire life -- up until a few days ago, when a competing recipe turned up on someone's blog. And now this. Cosmic!

Don't think I'll be trying either any time soon, though. The whole outlandish notion does violence to perfectly innocent spinach and artichokes that never meant anyone any harm (especially the competing version, which has not only cheese but mayo! :puke: )

9. ACK! Mayo!!??! No! The Mascarpone adds the extra creaminess.
I was served this version at my sister's baby shower. It rocked so hard I made it at home and brought it into work.

Not appreciating cheese is a hinderance in a recipe such as this, for sure.
