you won't believe this, but I have a 20 lb. turkey in the oven right now
my son and I went to 2 different locations for Thanksgiving, and neither one of us brought home any leftovers. My son was pretty upset about that.

So, I'm making turkey, stuffing, mashed potatoes and gravy and a veggie today.

no, I'm not doing cranberry.

If he wants rolls, he'll have to pick them up at the store.... I forgot all about them.

no pie

I agree with you though. One of the best parts about Thanksgiving is the leftovers.

I'm excited about the gravy. The last time I brined a turkey like this, the gravy was TO DIE FOR!

I have a turkey breast brining and will be roasting it for lunch, I'm having some of the fixings with it even.

I mean, I know the whole salt/sugar thing, but what do you use for aromatics?

11. I'm just doing a basic kosher salt and brown sugar brine
It's only the second time I'm brining a turkey, I'll get more adventurous as I learn more about it.

12. my brine contained
2 oranges, the juices squeezed into the water
2 lemons, the juices squeezed into the water
sage
rosemary
a few allspice berries
whole black peppercorns

when I put the bird in the oven, I stuffed it w/ an orange, a lemon and more sage

16. I'll give that a try next time, which will most likely be after the New Year
Since I'm single, and living alone, even a small turkey or turkey breast lasts me quite a while.

8. well,,, I do have a pie crust in the fridge
but honestly since the bird is in the oven.... I don't know how I'd get pie made now. It would have had to have been made yesterday.

I'm the only one who eats it anyway (my son is some sort of a mutant--doesn't like sweets). Last thing in the world I need is a whole pie to eat all by myself.
