Is my parrot stupid?
I show her a walnut and an almond, and she just stares at them as if the nuts are going to attack her.

De-shelled, she knows what they are and understandably pigs out on them.

After all, although she knows she's supposed to assume that walnut and almond shells contain walnuts and almonds, it is possible that you have extracted the nutty contents and replaced them with a quantity of Semtex or a small scorpion.
