Share your favorite low-budget nutritional meal recipe |

Since oilslickdick's buds stole my life savings, I've been looking for good, nutritional meals for for under $2/serving.
My favorite so far (6 servings at less than $1 per) is tuna & egg salad:
4 cans of tuna 10 hardboiled eggs (chopped) 1 can black olives (chop/dice) diced onion, celery, beansprouts sweet relish mayo, soy sauce, tartar sauce paprika, seasoned salt, pepper
Serve as sandwich, open cheese-melt, tortilla, or attack with spoon.
Got any good ones, folks?

Red Beans and Rice (on the cheap ;))
1 can store brand red beans 1 jar salsa Rice
Heat beans, add salsa to taste. Pour over rice. Top with shredded cheddar and sour cream. (And about a half a bottle of Tobasco, if you're me. :D)

cook together al dente. Top with parmesan cheese and fresh chopped tomatoes. Never get sick of it...

Half a pound of burger 1 can condensed tomato soup 1 rib celery, chopped 1 small onion, chopped To taste: curry powder, garlic salt, oregano one and a half pounds of elbow macaroni
Saute the meat and veggies together. When meat is browned, add the spices, give it a stir, then stir in the condensed soup. Prepare the elbow macaroni as directed, drain it, and mix the sauce and macaroni together. You may want to thin the sauce a little, but it's meant to barely glaze the pasta, not have the pasta swim in it.

You can use the cheaper cuts of chicken, like thighs, lots of veggies.
Potato soup is a favorite of ours, too. About a cup of cheddar, maybe add a little bit of ham if you've got it.
Ham and potato casserole is pretty cheap, too.
If you're still OK with beef, sloppy joes are pretty cheap. Add some oven potatoes and baked beans and you're set.
Homemade pepperoni and cheese pizza is pretty cheap, if you make the crust yourself, and go easy on the cheese.
Chicken-fried rice is cheap.
Casadillas(sp) are filling and pretty cheap.
Baked ziti's good.
Save leftover veggies thru the week, and at the end of the week make chicken pot pie using just a couple of chicken breasts or a few thighs.
Spanish rice with a whole lot of bacon(there goes the diet for sure), with some beans.
Mountain man breakfast for supper every once in a while helps the budget.
Salmon Loaf and veggies.

You're now a bookmark. Sounds like you have this down to an artform.
I must do more ham dishes, especially ham & potato casserole - if you'd like to expand on your recipe for that (and whether it keeps well frozen), I'm all ears.

About 2 yrs ago I decided to make 2 or 3 weeks worth of menues and stick to 'em, instead of trying every recipe under the sun. Easier to make and stick to a food budget this way, too. I've got my recipes in a 3-ring binder in plastic sleeves, divided by breakfasts, lunches, dinners, desserts, and mixes used for recipes. It is literally called "Mom's Diner". :) I'm still fine tuning it a little bit at a time.
The trick is to boil the potatoes until barely done. They finish cooking in the oven. The ham and potato casserole freezes well if there is enough sauce. You can use cream of mush soup or make your own sauce. I've started making my own sauce. Here's a mix recipe that makes a soup substitute:
3 cups dry milk powder 1/3 cup corn starch 1/3 cup chicken bouillon(or vegetable bouillon) 1 Tbsp onion flakes, dried 1 tsp basil, dried 1 tsp thyme, dried 1 tsp white pepper(black works fine)
In a large mixing bowl, combine all ingredients, mix well. Place mixture into a one quart jart, lable and store up to six months.
To make soup: Using a small saucepan, mix 1/3 cup instant cream soup mix with 1 1/4 cups water or broth. Simmer over low heat until thickened. This makes just enough to use in place of a 10 1/2 ounce can of cream soup when making casseroles.

boil some linguine, spagetti, whatever pour off water. add some olive oil and italian seasonings. toss
