Canned sardines--underappreciated culinary awesomeness, or satan's nastiness, only to be feared? |
|
I'm trying to conform my eating habits to be more environmentally friendly; sardines are good sources of Omega-3 oils, and better than salmon, environmentally/food chain-ily speaking.
Anybody a fan? Suggestions requested, please.

I love them, but many people can't even stand the smell of canned sardines.
Simple ways to eat them:
1) dice a fresh tomato and some red onion. Make a salad dressing of fresh lemon juice with olive oil and fresh dill or dried dillweed and some minced garlic, and black pepper to taste . Place a few leaves of lettuce on a plate, top first with the sardines, then the tomato and onion. Drizzle dressing on top and serve with lemon wedges.
2)Remove the backbone and mash the sardines with mashed hardboiled egg or mayo or yogurt, some mustard and minced onion, celery, and/or garlic, chopped chives and other herbs (dill or dillweed, basil, thyme) and use it as a vegetable dip.
Sardines are a good source of calcium because the bones are soft enough to eat.
on edit: whole on a saltine with either mustard or hot sauce is my favorite way to eat them.

Straight out of the can on soda crackers, very good. Use the oil, mustard, water or tomato packed, whichever you like.
Mashed up with onions, garlic and tomatoes over rice. Pour about a tablespoon of lemon juice over a small sliced onion, then sweat the onion in some oil, and then add the garlic, about 2 cloves, chopped. Then add a small can of crushed tomatoes and the sardines, use the ones in olive oil. When all is heated thru, serve over short grain rice. Season to taste.
Also, sweet onion and sardine sandwiches on French bread. Trader Joe’s carries some good ones.

Sardines = bigger. I'm DYING to try some fresh, but I'll have to go to the fishmonger at the Santa Monica farmers market for that, I think.

Winter to early spring is the time to get them up here in the SF bay area. Look for them in large supermarkets or Whole Foods at Christmas because they're one of the fish used for the Italian Feast of the (#) Fishes. I grill them and they have a milder taste than the tinned ones but are still rather assertive. All they need is a squeeze of lemon juice at the table.

looking for a snack, somehow she figured out how to open a can of sardines. The entire house was awakened by her screaming bloody murder as she was terrified of being eaten by the "fish teeth" (I assume it was the bones). The most fun was the smell and slipping on the now-flung-to-every-corner-of-the-kitchen sardine carcasses. :eyes:

I tolerated them when I was a kid -- but they were SMALLER then.
Put 'em on bread, dab on a little mayonnaise (or get the pre-mustarded ones), and chomp away and eat them fast so you don't have to think about the fact you're crunching on their brains.
Don't look at the sammich once you take a bite -- you know they leave the guts in there(another reason why you gotta eat 'em fast once you take your first bite!)
Most of the time, though, I think I'd rather go hungry than eat sardines. But I am sure they are a wonderful thing to eat for the healthy fish oils.
