But a lot of people don't like it. Mostly because all they've ever seen is the bland homogenized processed stuff in the stores nowadays. Real buttermilk tastes a lot better.

As an amateur mead brewer, I found very quickly that your average off-the-shelf honey is waaaaaay too overprocessed and loses all of its bouquet and flavor. And often picks up an unpleasant plasticky aftertaste from the packaging.

I'm pretty sure I made that one up - basically, I am a lazy person and like to find the best and fastest way to get something done correctly, but only because if I have to do something a lot, I hate to put more effort into it than I have to. :)
I also describe myself as an Optimistic Cynic: "Given the chance, everything will go wrong, but I'll probably learn from it, and things could always be worse."
