Are there any interesting attractions between? I know that I must be passing through some beautiful country. Are there any cool little things to do along the way?

I love my cousin, but I was really looking forward to doing exactly what you're talking about. I've driven from San Francisco to San Diego (8 hours) about a million times, but I really wanted an epic road trip all by myself.

If I were you I'd stick north, and drive through the Dakotas, Montana, Idaho and end up in Seattle. I'm sure it'd be pretty.

My point of origin is San Francisco. So doing Chicago to LA on the way back is the most feasible.

If you're going to Seattle, there's a ton of natural beauty (along with the tourist traps) along the I-90 corridor.
However, i agree with whoever said that you should get your kicks on Route 66. I plan to do this as a treat a few years from now, just to see a part of the country i have never been through.

I'm specifically looking for stuff to do along I-80.
On the plus side, I'm going to be hitting up 6 state capitals on this journey. Sacramento, Salt Lake City, Cheyenne, Lincoln, Des Moines, Madison.
