I'll bring a Kosher hotdog (and bun) with me and microwave it for lunch (keep it in office refrigerator between arrival and lunch). Homemade chicken salad (very easy with the cooked chicken you can buy) is always good and I'll often make a fruit salad or a rotini tomato pesto salad Sunday night that can last most of the week.
My lunches are mostly leftovers.

*Shrimp Sushi *Tunafish Sandwich *Veggie curry and rice (preferable a creamy curry, like Korma) *Cold pasta with peas, fresh mozzarella, beans, red onions in a virgin olive oil balsamic vinaigrette sauce (little sauce, enough to coat) *Smoked salmon & cream cheese on a multi grain bagel.
Every meal should be accompanied by fruit: Apples Watermelon (yum) Mangos (for curry meal!) Bananas (bring peanut butter!)

I pick a one dish meal I can eat 4 servings of, and then Friday is my free day.
So On sunday i might make chili and rice, or gumbo, or a curry or soemthing. Or maybe i'll do roast chicken and veg - something like that - and I will eat that for lunch for 4 days and then on Friday I go out to eat.
The variety isn't on a day to day basis but it's there.
