1. The difference (to me) is taste
If you're mixing with mayo, oil is gross. If you're just eating it, oil's okay. I have no idea which is healthier.

This is the brand I buy:

And my favorite part about this particular brand of tuna is that it's extremely flavorful, while some of the water-paced tunas have a "fishy" taste IMHO....

ON EDIT: NO, you don;t mix this one with mayo. You drain some of the olive oil and serve it "as is" on a good roll or fresh Italian / French bread.

5. Right -- the stuff packed in oil is for some uses, the water packed stuff is for tuna with mayo.
The olive oil packed tuna is good on an antipasto platter, in salade nicoise, cannelini and tuna salad, or quick cooked dishes.
