What's for dinner, people?
I am making Huevos Rancheros...Fried tortilla, topped with cheddar cheese and egg, then topped with salsa fresca, homemade guacamole, and sour cream...All of this will sit atop my black bean sautee, which contains black beans, green pepper, onion, garlic, Ro-Tel diced chiles and tomatoes, and Sazon Goya.

YUM! :9

Off to make the salsa! :hi:

1. Hmmm--baked fish, mashed potatoes, and green beans.
Pretty boring dinner night, but hey, we're trying to relax this weekend. The past week was just nightmarish with start-of-semester craziness.

Following a zucchini bread appetizer. Accompanied by a side of zucchini bread with a soupcon of zucchini bread, and a nice slice of zucchini bread for dessert.

29. Sorry, babykins. MrSG doesn't use receipe's for lots of the stuff
he cooks. He just makes it up as he goes along, and 99% of the time, it is delicious!

I did a classic Maghritte (spelling?) the other day with tomatoes and basil out of the garden, some kosher salt, olive oil, homemade crust and mozzarella - didn't add anything else, not even garlic (that was hard for me I tend to put it in everything) - it was really good!

24. It really does
as long as you get as much of the juice drained off of them as possible. I did use some fresh minced garlic in olive oil (I had minced too much a few days ago and put it in the oil to keep it), kosher salt, and pepper in mine.

I really got to try making one with fresh mozzarella one of these days.

hopping though. Celine Dion is coming to Foxwoods!!!11 They have a big tv screen by the entrance to the new MGM Grand and it was advertising HER!!11 I should host a DU gathering for her show! :o :rofl:

Second, I went out for Mexican. Mom gave me money to go out to eat in exchange to pick her dad, and a few drunk friends up from a party later and bring them back home. . . the things I do.

Dinner has been wonderful the past few days. Delicious lumps of BEEF on Thursday. . . Brisket that melted in your mouth with homemade Onion Rings Friday. And I went out for some chimmachongas and fried ice cream today. Pork Shoulder Tommorrow.

Oh and a note on the brisket. I would love to give you the cooking time.. but when I asked the response was . .

Oh I say it takes about three or four beers and then it's ready.

35. I made a roman style chicken dish
there's a place where i used to live that had the absolute best huevos rancheros. You could eat that for breakfast and then not feel hungry until about 6 pm that evening. It was fantastic!

Tonight, I made roman style chicken.

Lightly floured some chicken thighs (i prefer the dark meat), fried in OO and butter. And bacon too. Chopped up some onion, red and green peppers, garlic and zucchini, fried in the leftover oil from the chicken.

Add a decent white wine, some chicken stock, diced tomatoes, thyme and some other herbs. Simmer on low for 30 mins. Add freshly chopped parsley and some capers.

It was delicious!

And I got tipsy on white wine while cooking it, and watched the Vincent Price movie Masque of the Red Death. (adapted from E.A Poe)

38. Grilled ribeyes
and wild rice casserole and fresh sauteed green beans. Tomorrow we finish off any leftovers in the refrigerator. Monday will probably be Spam and tuna fish (southern Louisiana).
