I enjoy all of his work, but I'm listening to "Plexure" for the first time (finally), and it's absolutely brilliant.

I thought I had lost my copy a few years ago and was pissed, but it turned up again.
My favorite bit is the long (well, long relative to most of it) bit with the backwards "She Drives Me Crazy," interspersed with that cut-up Annie Lennox melisma.
I also like how he fused the bass lines from "Like a Virgin" and "When Doves Cry." Not only do the tempos match, but they go together so well, that it took me a few listens to realize that it was two different songs.
The really insane thing is that he did that all with old-school tape splicing methods, no digital sampling at all.
