I need some yummy, easy vegetarian recipies!
My boyfriend is coming over on Friday. We're going to a concert, but first, we're having dinner at my place. I figured I should cook something yummy. I don't really have time to go hardcore grocery shopping, though.

So...yeah. Suggestions are appreciated!

2. I am slow-cooking pineapple with seitan and leftover stir-fry rice
at the moment. Oh and I put bbq sauce on it to soak in :9

Usually, any stir-fry or pasta-type dish is easy and quick. You can make that up as you go, just adding the spices you like and you're done!

6. Minestrone is good...here's how I make it
about a gallon of water, more or less depending on the size of the pot (I use a big one - make a big batch!)
one chopped onion
about 5-6 diced taters
about 5-6 minced cloves garlic
about 5-6 thinly sliced carrots
2 cans kidney beans, drained (not the chili flavored ones...just plain)
2 cans tomato puree (I don't like big chunks of tomato; you can use diced ones if you don't mind 'em)
black pepper
crushed red pepper
celery seed
sea salt
2-3 bay leaves
cook all that until the spuds and carrots are just about done; bring to a boil and dump in a box of tricolor rotini and cook until that's done.
