The end result of frito pie is about the same as enchiladas.
Same basic ingredients, different steps, similar results ;)
Do you ever eat nachos? Again, very similar ingredients and results.

they become a meal to me, too. Nice balance of grain, legumes, dairy and sometimes guacamole :9
And frito pie is an actual meal. I grew up eating it every now and then, usually on weekends when my mother didn't want to cook a big meal for us all. We always ate well, however this particular meal seems to be described. It still has ingredients that are filling and not so bad for you :)
You could also look at how much frito ends up in a particular serving and compare to what someone would eat with a burger or sandwich...

or a pork rinds pie, if that makes sense. I just don't think snack chips are an ingredient for meals. They strike me as a stand-alone ingredient. :shrug: This could explain why the taste for it has remained regional...

I simply see the fritos portion as an ingredient, that can also be adjusted to the person's tastes. Such as using oven-baked corn tortillas broken into pieces, or go ahead and line the pan with regular corn tortillas and layer as one would do with a lasgna, only using chili (meat or veggie), onions and cheese. There actually is a form of enchilada caserole that works like this. I don't see frito pie as being too far off of that recipe.

At least that's what we used to do. Slit the single-size Frito bag up the middle, pour the chili in, add the cheese and some sliced green onion. Mmmm. Pepper bellies. Portable. I first had those at a kindergarten carnival, many years ago.
Avocado is good with this, too.

I really like eating this, but I don't like the aftertaste that lasts a couple of hours. And the sodium overload -- oy!
What kind of chili is best? We in the Pacific Northwest are partial to Nalley's.
