I believe I have recreated the "People Gotta Eat" Killer Pecans |

They stopped making these little packages o' addicting pecan goodness and went out of business and I think this year, after 8 trial batches, I have gotten the recreation as close as possible. I will now share for your edification and enjoyment.
Blanch pecans in boiling water for 1 minute, drain.
Since I have a pretty small pan for frying, I made my pecans in one cup batches. Mix the following for each cup you make: Pre-coating mixture: 2 tbsp sugar, 1 tsp cayenne. (May want to adjust cayenne to taste) Post-coating mixture: 1/2 tsp salt, 3/4 tsp cumin.
Put pecans in pre-coating mixture in a ziplock bag and shake to coat them evenly. Fry in about an inch of peanut oil at 350 for about 3 minutes or just until not quite done (they will brown more after you take them out.) Remove from oil with slotted spoon, drain, pat dry, put in post-coating mixture while still hot.

I am going to have to try your recipe! It is so go of you to share, a lot of people are suffering since Killer Pecans went under. I was so bummed when People Gotta Eat died... Killer Pecans were amazing... as was their packaging. It was a nice local company too. (They were doing just fine till they left Dallas!)
