OK, how do I know how many sweet potatoes to cook to make 2.5 cups |

of mashed cooked sweet potatoes? Can anyone help? :shrug:
I want to try these, but should I make one sweet potato? Or two? Three potato, four?
SWEET POTATO AND WALNUT ROLLS
2 1/2 c. mashed cooked sweet potatoes 2 tbsp. melted butter 1/2 tsp. salt Pinch of pepper 1/3 c. honey 2 c. chopped walnuts
Preheat oven to 350 degrees. Combine sweet potatoes, butter, salt and pepper in bowl; mix well. Chill until easy to handle. Shape into 2" balls. Chill until firm.
Heat honey in small heavy skillet over medium heat until hot. Place potato balls in honey, turning to coat well. Roll in walnuts. Place 2" apart in greased shallow 9"x13" baking dish. Bake for 20 minutes or until light brown. Yield: 8 servings.

;) Thanks, KW. I hope these are tasty. If I don't DO something with walnuts or pecans in the house, my husband devours them as soon as he finds them (I have to hide nuts all around the house - I feel like a squirrel). So I look for new recipes with nuts in 'em and came across this one.
