I think I'm going to try eating at least one vegan meal a day next year. |

I'm looking at the menu for the university I'm going to next year, and they have a "Vegan Bar" along with a bunch of other yummy food. And the vegan stuff actually sounds yummier than the majority of the other food there.
Think I can do it? :P

before I became a F/T vegetarian (The second time. I went vegetarian in HS and only lasted a month because I had no idea how to feed myself and no idea how to cook soyfoods properly.), I liked to eat a lot of vegetarian meals. Lunch usually. Being both a hearty eater and...well...fat, I preferred the cafeteria-style all-you-can-eat dining hall.
Every year, for lent, they had meat-free Fridays with fish. The rest of the year there was a vegan Friday option. Every %$* year, during lent, they'd take away the vegan option to make room for a second fish option.

I have family and friends who are vegan and I actually enjoy making meals for them. If you're not used to doing so, it's a bit of a challenge to prepare a completely vegan meal for a large group of people and achieve results that both vegan and non-vegan's enjoy.

the vegetarian and vegan meals provided are usually better than the others. When I take long flights I always request the vegetarian meal, because it's going to be better than whatever else is offered. I do eat meat, but I'm trying to cut down on it, and cheese..... and I'm in love with a vegan woman, and I'd do anything for her.... yeah.... ok.... now I have to go listen to Morrissey.

I'm sure it probably is better than the other food. It's more likely to be fresh food. It's less likely to be out of a can. They probably put more thought into it.
The regular menu is probably the same stuff they've been serving students for decades; a lot of Mystery meet and cheese flavored product that they get at a discount because the ingredients are dodgy.

The menu looked really good. Like, I forget most of it, but the things that stick out in my mind are peas with mint, and eggplant curry. Yum.

Good for you. I'm a vegetarian (lacto, very-little egg) and I'm trying to increase the number of dairy-free meals I eat. If you're ever in want of recipes, there is a great collection thread of recipes pinned to the top of the V/V/AR forum.
Or ask. Between the veg*n community here, I don't think I've found anything yet that we haven't come up with a decent recipe for or instructions on what to do with _____.

I do eat meat, but I'd rather not, and I hope to show him it's not really necessary and -- after a time -- not really palatable.
Anyone have anything scrumptious and convincing I can make in the coming week to convince him? YES, I'm willing to cook not only on my nights to cook, but mine as well, to convince him that we really can be healthier and happier without being complicit in the killing of animals. VEGETARIAN recommendations, please, not VEGAN, please -- vegan a bit much to launch in our household cold turkey. :hi:
