I'm cooking up a storm

my friend's girlfriend is having surgery on Tuesday so I'm making them a week's worth of meals (and what I make for them, I'm making for me so I don't have to cook all week either). Here's the menu:

spaghetti w/ homemade sauce, meatballs and sausages (there's enough of this for 2 meals)
hot dog hash
roasted chicken (rosemary & lemon)
homemade pork & beans w/ kielbasa
scalloped potatoes w/ ham
beef stir-fry over rice



I'm actually pretty excited about dinner this week.....

2. comforting and dirt cheap
about 1/2 a bag of southern style hash browns from the freezer section
one onion, chopped

in a hot pan--let it get good and brown


then turn down heat and add:

1 diced fresh jalapeno pepper
2 cloves of garlic
5 diced hot dogs (I buy a package of 10 and use half of it)
salt
pepper
pinch of thyme
and a couple of shakes of Gatorbreath (it's a cajun salt my sister gets for me--I don't know where)



that's it

7. It sounds good, like a tastier version of Great Grandmother Clara's
Great Depression Cooking recipe. Someone put her video on DU last week for low-cost meal ideas- she has several more on YouTube-

Your friend's friend will be so relieved not to have to think about dinners!
I worked for a chiropractor who advised some of his patients on how to do cleansing fasts. They were often amazed at how much time they had when there was no food shopping and cooking to do!

but they always remember how you make them feel. I know if I were ill, I'd have people to do this for me, so I guess this is my way of paying it forward.

Besides, like I said, I don't have to cook this week either.



As I type this, the only thing left to make is the scalloped potatoes w/ ham.

I'm thinking I should write Yankee Candle and tell them they should make a "baked bean" fragranced candle. I LOVE the way my house smells when pork & beans are baking in the oven.

10. I'm exhausted
I actually made the spaghetti & meatballs yesterday, but everything else I've cooked today.... and I've kept up w/ the dishes too (no dishwasher either).

I'm a little worried that all this won't fit in my fridge.
