What are your fav. peanut butter sandwich combinations? Are mine really so strange? |

Over the last few months I've been putting together a collection of my family recipes for posterity that occassionally also tell stories of how I came to the recipes.
I've nearly got the thing done, and yesterday I showed the S.O. the index. She thinks my peanut butter and Lingonberry is fine, and she even thinks my peanut butter with cherry chutney is OK. But she says I shouldn't include my "truly wacked out" peanut butter sandwiches:
Peanut Butter, Honey and Onions Peanut Butter and Remoulade Peanut butter and Kim Chi-oid Vegetables Sweet and Sour Peanut Butter with shrimp, scallions and bean sprouts
Although she admits that the last one is somewhat like Pad Thai on bread, she thinks these including mention of these will convince posterity that I am/was crazy.
So I am wondering if other people have favorite peanut butter sandwiches that break away from the old PB&J. are really wacky compared to other people's peanut butter sandwiches for adults.
If you have a favorite peanut butter sandwich I'd like to read about it...just for the sake of measuring my own sanity.

One is a peanut butter and honey sandwich. That is usually a part of my daily lunch.
The second one is something my mom came up with when I was a kid: peanut butter and green olives sandwich! YUM! A little labor intensive, because you cut the olives in half, but worth the wait! :9

Actually, I recently asked her from where she got that combination. She said that she liked green olives, and she liked peanut butter, and thought why not combine the two. Simple! :P
Hope your throat is feeling better. The pain might seem lessened compared to the smarting of your butt after this spanking=>:spank:

They have to be refrigerated. The brand with the stork logo (forget it now) is too salty.
When I lived in NH, I could get Rosoff and they are even better - their sauerkraut is probably the best also.

One and a half cups plain yogurt, STRAINED. Unless you can find Greek yogurt in your local grocery store! To strain, put cheesecloth over a medium bowl, secure it with a slightly-concave indent in the middle, scoop the yogurt onto the cheesecloth, and put it in the fridge for a few hours. This will get rid of some of the water and make the yogurt thicker.
One small, seedless, COLD cucumber, diced and lightly salted. Let it stand after being salted for about fifteen minutes, and wipe off any excess water with a paper towel.
A teaspoon of EVOO
One tablespoon lemon juice (fresh-squeezed, if possible)
One tablespoons plain sour cream
Two teaspoons red wine vinegar
One tablespoon fresh dill, finely chopped
One chopped clove of garlic
Sea salt and fresh-ground black pepper to taste
Put everything except for the yogurt into a food processor and blend it together for about a minute or two. Scoop out this mixture and stir it into the yogurt. Stick it in the fridge and let it sit for about three hours, to give all the flavors time to blend.

It needs something with crunch in the middle. I use peanuts usually but I've also used pine nuts, toffee-crunch, pepitas, shelled sunflower seeds and celery.

I make my own pepitas. I also make my own veggie stock, it's the one benefit of being a vegetarian. If I throw the veggie refuse in a bowl I have enough within 2-3 days to toss it on the stove with some water and reduce over low heat. Likewise, I always have squash seeds collecting up to roast.

I haven't found anything to beat a plain ol' PB&J on whole wheat bread. However, I like to cut them into strips and dunk them in ice cold milk. It's just delicious.

The brown bag lunch of samwich and chips - you got to go out and play as soon as you ate all of your lunch, putting the fritos/chips on the samwich made it a faster way to eat all of my lunch.
some wonderful comfort food came from elementary school brown bag lunches, like meatloaf samwiches. mmmmm

I do like cole slaw on PB, and Remoulade is sort of between cole slaw and tartar sauce, and I think they are great.
Calimari would probably be Ok with some other stuff in support, like shredded carrot, onion and shredded lettuce with a dash of of fish sauce.

Because I always just eyeball the amounts.
But about 2 parts peanut butter to 1 part powdered milk and 1/2 part honey. Mix together, flatten into pie pan and place in freezer. This is a relatively healthy and delicious sweet.
I even saw a commercialized version for sale as health bars. Much better and cheaper to make your own.
We also used to put peanut butter on BLTs!

No doubt, if you don't like Kim-chi, you'll not like Kim-chi with PB.
You can make lots of interesting Asian flavored PB's. I am sure it would make NY'ers nuts, but curried PB, gingered PB ketchup, and Chile paste and PB are all interesting with diced onion on Nathan's Hot Dogs.

for one thing, it works well as something to hold the peppers or tomato on the sandwich. I like peanut butter with carrots, red bell peppers, some cheese, and some BBQ sauce. Maybe some sprouts too.
PB with avocado is good too, although definitely not low fat.

Sometimes I add a little honey. Sometimes I add bacon, Someimes both. It's really wonderful on rye bread with seeds but even better on thick cut whole wheat lightly toasted. Best with Adams Chunky PB.
You also really can't beat a fluffernutter which is even better if you add some bananas and chocolate chips and stick it in the oven for a bit to warm. Yummers.
